These energy bites are extremely nourishing and they’re super simple to make. They’re perfect as a daytime snack – a sweet treat with a good cup of coffee, mmm! They also make a great post-workout snack – your muscles will thank you for the protein!

Preparation time: 10 minutes

Serves: 20

INGREDIENTS:

  • 1 cup oats (can use gluten-free oats as a substitute)
  • 1/2 cup chunky natural peanut butter (can use tahini as a substitute)
  • 1/2 cup unsweetened desiccated coconut
  • 2 tablespoons vanilla protein powder (can use 2 tablespoons of almond meal/flax meal as a substitute)
  • 1/3 cup honey
  • 1/4 cup chia seeds
  • 1/2 cup cacao nibs
  • 1/4 teaspoon cinnamon

METHOD:

  • Combine all ingredients in a bowl until they’re mixed together
  • Roll twenty bite sized balls from the dough
  • Allow your energy bites to cool for 30 minutes before eating
  • Keep your energy bites in an airtight container in the refrigerator, for up to a week
